Ingredients:
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) corn, drained
2 bell peppers, diced
1 medium onion, diced
8 small taco shells or tortillas
1 cup shredded lettuce
1/2 cup salsa
1 tsp cumin
1 tsp chili powder
1 tbsp olive oil
Instructions:
1. Heat olive oil in a skillet over medium heat. Sauté the diced onion and bell peppers until softened (about 5 minutes).
2. Add the drained black beans and corn. Season with cumin and chili powder, stirring occasionally for 3-5 minutes until heated through.
3. Warm the taco shells and fill them with the black bean and bell pepper mixture. Top with shredded lettuce and salsa.
